Campmeals by Torchlight – Rice Paper Rolls

YOU WILL NEED

1 pkt rice paper rolls

1 pre cooked chicken breast, thinly sliced

2-3 carrots cut into thin sticks

1 portion of rice vermicelli noodles

Coriander, fresh bunch

Warm water

1 bottle of Vietnamese Dipping sauce or satay sauce.

 

METHOD

Place the noodle portion in a bowl and cover completely with cold water. Stand for 10 minutes. Use a fork to loosen the noodles then drain water. Rinse and drain again. Use scissors to cut noodles into 5-10 cm strands.

Soak a clean tea towel, wring it out and lay flat on bench. Soak one rice paper sheet at a time in a shallow bowl of warm water. Lay a sheet on the damp tea towel. Place a few pieces of chicken, carrot sticks, rice noodle and coriander on the upper half of the sheet. Roll the rice paper over the ingredients towards you, tuck in the sides and complete the roll until it is sealed.

*If coriander is not your thing, use can use baby spinach leaves instead.

** You can take this meal next level and use peeled tiger prawns instead of chicken! Yummo!
